Consi's Mediterranean Pasta Salad
Ingredients
Mediterranean pasta salad:
- 500 g fussili
- 100 g of small tomatoes
- 2 packs of mini mozzarella
- 60 g pine nuts
- rocket salad
- A jar of sun-dried tomatoes
- 50 g of green olives
- 2 cloves of garlic
- 3 shallots
Dressing:
- oil from the sun-dried tomatoes
- balsamic vinegar
- medium hot mustard
- a little water
- 1 spoon of honey
- salt
- pepper
Method
- Cook the pasta al dente
- Cut everything into small pieces
- Roast the pine nuts
- Sauté the onions and garlic
- Mix the dressing
- Mix everything together in a bowl
- Leave to stand in the fridge for at least 2 hours
- Finally, mix in the rocket
