Consi's Mediterranean Pasta Salad

Ingredients

Mediterranean pasta salad:
- 500 g fussili
- 100 g of small tomatoes
- 2 packs of mini mozzarella
- 60 g pine nuts
- rocket salad
- A jar of sun-dried tomatoes
- 50 g of green olives
- 2 cloves of garlic
- 3 shallots

Dressing:
- oil from the sun-dried tomatoes
- balsamic vinegar
- medium hot mustard
- a little water
- 1 spoon of honey
- salt
- pepper

Method

  1. Cook the pasta al dente
  2. Cut everything into small pieces
  3. Roast the pine nuts
  4. Sauté the onions and garlic
  5. Mix the dressing
  6. Mix everything together in a bowl
  7. Leave to stand in the fridge for at least 2 hours
  8. Finally, mix in the rocket
