Ge family's Moo Shu Pork

Ingredients

200g of lean pork, e.g. loin
2 medium eggs, beaten
150g bamboo shoots, drained (optional)
10g wood ear mushrooms, soak in warm water
A quarter of cucumber, sliced
2 cloves of garlic, finely chopped
2 Tbsp cooking oil
1 Tbsp light soy sauce & sesame oil for drizzling

Marinade:
1 Tbsp light soy sauce
1 Tbsp of water
1 Tbsp cornflour

Method

  1. Mix the pork slices with the marinade and leave for 15 minutes.
  2. Heat half of oil over medium high heat. Pour in the egg and spread it out, leave it to set for about few seconds, then stir and scramble into bite-size pieces. When the egg is slightly brown on the bottom, take it out.
  3. Heat the remaining oil till very hot, add the pork. Stir-fry till lightly browned and push them to one side of the wok.
  4. Add garlic and give it a quick stir till fragrant. Add vegetables and stir-fry for 2 minutes then mix in the pork.
  5. Add Light Soy Sauce to taste. Cook till hot, add a splash of water if it becomes too dry.
  6. Add the scrambled egg, mix well and drizzle with some Pure Sesame Oil before serving.

Ge family's whole back ribs

Preparation Time: 20 minutes
Bake cook time: 90 minutes
Servings for: 4-6 People

Ingredients

Dry seasoning ingredients:
7 Tablespoon brown sugar
2 Tablespoon chili powder (ground red pepper)
1 Tablespoon salt
Garlic powder (if preferred) Ginger powder (if preferred)
Peppercorn powder (if preferred) a.k.a Sichuan (Flower) Pepper

Sauce ingredients:
6 Tablespoon light sodium soy sauce 3 Tablespoon cooking wine
3 Tablespoon minced garlic 3 Tablespoon water
2 Tablespoon apple cider vinegar 2 Tablespoon honey

Method

  1. Cut the whole baby-back ribs into two pieces from the middle. Mix the dry seasoning ingredients well in a small bowl. Spread it evenly over the ribs and rub it well to enhance the flavor. Use foil to completely wrap the ribs, seal it tight and leave it in refrigerator for up to 2 hours.
  2. Stir sauce ingredients in a bowl, open up only one side of the foil wrap, pour in the sauce under the ribs. Seal it again and make sure it's completely sealed without cracks and holes. It is very important to keep the moisture inside. Put the ribs on the baking pan.
  3. Preheat oven to 375F. Put the ribs baking pan into oven, Bake about 70-90 minutes, depending on the rib size, or until the meat falls apart. Put into the dish, slice the rib and serve while hot. If desired, the remaining gravy can be poured on the ribs.
  4. If crispy outer crust is preferred, open up foil and broil for 5-10 minutes.
